Healthy Chicken Soup Recipe
Chicken soup recipe is one of the healthiest foods you can serve your family. It’s delicious and full of wonderful flavors that can be enjoyed by the all family.
Chicken soup is a great dish to serve when you have a come together party or you want to celebrate a special day like Christmas or Thanksgiving, or even when you want to prepare a memorable dish. You can use fresh raw chicken or cooked leftovers chicken to prepare your delicious soup.
Add chicken stock which is well flavored to perfect the taste of your soup. Use fresh stock which is low in fat…you can do this by allowing the stock to cool and remove any visible fat. Since chicken is rich in fat, this helps prevent the stock from tasting greasy.
I keep alternating chicken and turkey carcass because the same recipe is used to prepare turkey soup.
There are different way to flavor chicken soup. You can cook this soup from scratch…using raw fresh chicken wings, thighs or breast…or use cooked, skinned chicken breast. (if you are watching your calories intake, remove the outer skin from the flesh to lowers the fat content and calories.)

After washing your vegetables, slice them into small pieces.
Heat the oil in thick bottomed pan and then mix in the sliced celery, onions and leek. Cook without coloring. Add in the flour, stir and cook to a sandy texture over moderate heat without coloring. (The flour helps thicken the soup but if you need a thin soup you can skip adding flour.)
Remove from the heat and cool faintly. Add the stock and stir then return to the heat and bring to the boil. Blend in the bouquet garni and season (salt and pepper to test) and simmer for 30 minutes then remove the bouquet garni. You can skim if need be.
Liquidize through a strainer and transfer to a clean pan then heat gently. Let it reboil then finish by adding milk. Taste to adjust seasoning if need be (salt and pepper). Add garnish and serve as light meal accompanied by your favorite food.
